Risk:

Shiga toxin-producing Escherichia coli (STEC) are organisms that can cause serious and sometimes fatal infections in young children, elderly people, and others with weakened immune systems. STECs cause an acute diarrheal illness (often bloody diarrhea). A subset of infected individuals may develop hemolytic uremic syndrome (HUS), a severe illness characterized by hemolytic anemia, thrombocytopenia, and renal failure, which can lead to death. Salmonella infection typically causes gastroenteritis with nausea, vomiting, and abdominal cramps. In at-risk individuals, it can lead to more severe illnesses such as arterial infections, endocarditis, and septic arthritis.
